Dave’s Chicken Veggie Melt

This recipe was completed in under thirty minutes (Including Photography)

Ingredients

1 Large Chicken Breast Skinless and Boneless

1 Cup Mozzarella Cheese Shredded

1 Cup Fresh Raw Spinach Leaves

4 Vine Ripe Small Tomatoes

1 Jar Mushrooms

Mrs. Dash Fiesta Lime Seasoning

1/4 Cup Extra Virgin Olive Oil

1 Can Green Beans

Preheat Oven to 370 Degrees

In a Heavy Oven Proof Pan. heat EVOO to medium high temperature.

Use a quality, never frozen organic chicken breast if possible. This costs a bit more but the taste will be worth the little extra expense. I bought these at Winn Dixie and paid $4.34. This fed two adults.

Remove the breasts from the packaging. Always remember when handling raw meat to practice good hygiene. Use a clean cutting board for other ingredients after cutting chicken.

Cut the breast in half down the middle

Carefully slice the breasts down the center of each half to butterfly them. This makes them easier and quicker to cook through.

Season them to taste. I use Mrs. Dash Fiesta Lime but you can use what ever you like.

Place the two halves in the preheated EVOO

Cut approximately three to four small tomatoes in quarters and sit aside. Be sure not to use the same cutting board you used for the Chicken.

Turn the chicken when the pieces start to release from the pan. If the chicken is sticking, it’s not ready to turn. Always make sure to cook poultry completely done. The chicken will continue to cook in the oven later in the recipe.

Slice one jar of mushrooms and mix with tomatoes

Measure one cup of Mozzarella cheese and set aside

Once both breasts are cooked thoroughly, pour in the tomatoes and the mushrooms and heat slightly to get the tomatoes wilting.

Add one cup of Fresh Raw spinach leaves to the top of the chicken and tomato mixture

Pour the cup of mozzarella on top of spinach leaves

Place the pan in the preheated 370 degree oven. Make sure your pan is oven safe. If not, assemble this in an oven safe dish or container before placing in the oven.

While the cheese is melting into the mixture, open a can of Green Beans and begin to heat them as directed on the can.

Keep an eye on the cheese, if it begins to brown you’re almost done. Each person like their cheese melted a little differently, use your discreation.

Remove the beans from heat and set aside

When you’r pleased with the melted cheese, carefully use a pot holder to remove from oven and set aside for three minutes to rest.

Divide the Green Beans and the Chicken Vegetable Melt into two servings and enjoy with your favorite beverage.

Here is a better view of the finished product. Feel free to substitute any vegetable you like. Enjoy!
